Preparation Time: 20 minutes Cooking Time: about 1 hour Refrigeration: 2 hours Ingredients:(6 people) 1/2 cup Diced Fresh Pineapple (or canned) 1/2 cup Pitted Cherries 1/2 cup Peeled and Diced Kiwi 1 Lemon 6 tbsp. Granulated Sugar 6 Eggs Pinch of Salt Preheat oven to 425°F 1. Squeeze lemon and filter out seeds. 2. In a pot, add lemon juice, 3 tbsp. water, sugar, and fruits. Cook over a low heat for about 10 minutes. If the water dries up, add a little bit more. Remove from heat and let cool off. 3. In a bowl, whisk eggs with a pinch of salt. Add fruits (make sure that they've cooled off and won't cook your eggs!) and gently stir. Pour into flan dish (or pie dish) and bake in a bain-marie (double-boiler) for an hour or until the flan has taken (congealed). 4. Remove from oven and let cool off, then refrigerate for 2 hours or more. Voilà! Tip: If for some reason you can't bake in a bain-marie, just butter the flan/pie dish and bake normally. Variations: As I said above, you can substitute with whatever fruits you wish... so let your creative juices flow and have fun creating your own delectable flan recipes!!! Serving Ideas: Traditionally, flan recipes are served in one large flan dish (or pie dish). You can leave the flan in the dish, or you can flip over onto a serving platter.
